Balsamic Vinegar of Modena IGP is produced from partially fermented and aged grape must, to which wine vinegar is added. It is directly sourced from the native vineyards of Acetaia Malpighi in the Modena region, and from the proprietary wine vinegar, aged in oak barrels, passed down through generations. This vinegar is the result of wisdom and tradition deeply rooted in the production area. Its balanced flavor makes it an ideal accompaniment for dishes with pronounced flavors, such as foie gras, zucchini flower fritters, and beef carpaccio, as well as for more delicate dishes like peach chutney, sushi, and sashimi. The most traditional combination is always with flakes of Parmigiano Reggiano DOP and fresh fruit.
